Ingredients:
12 scallops
2 cloves of garlic
1 sprig of fresh parsley
5 tablespoons extra virgin olive oil
½ lemon
coarse salt
Separate the scallop from the shell very carefully using a good knife. Leave the inside of the shell clean and set aside.
In a mortar, add the fresh parsley, the chopped garlic and a pinch of coarse salt. Blend the mixture well. Add 4 tablespoons of olive oil and the juice of half a lemon, stir well until you have a creamy sauce.
Heat the iron to high temperature, put a few drops of oil right where we will place the scallop.
Soak the scallops well in the sauce and put them on the grill. Let them cook on one side and after a minute we turn them over with the help of a spatula.
One way to know exactly when to turn the scallop is by looking at the color of its upper part, when it starts to turn white it is time.
Once turned, put a teaspoon of the dressing on top of the cooked part and wait a minute.
Take out and place in the empty shell. Serve.
