12 scallops<\/p>\n
2 cloves of garlic<\/p>\n
1 sprig of fresh parsley<\/p>\n
5 tablespoons extra virgin olive oil<\/p>\n
\u00bd lemon<\/p>\n
coarse salt<\/p>\n
Separate the scallop from the shell very carefully using a good knife. Leave the inside of the shell clean and set aside.<\/p>\n
In a mortar, add the fresh parsley, the chopped garlic and a pinch of coarse salt. Blend the mixture well. Add 4 tablespoons of olive oil and the juice of half a lemon, stir well until you have a creamy sauce.<\/p>\n
Heat the iron to high temperature, put a few drops of oil right where we will place the scallop.<\/p>\n
Soak the scallops well in the sauce and put them on the grill. Let them cook on one side and after a minute we turn them over with the help of a spatula.<\/p>\n
One way to know exactly when to turn the scallop is by looking at the color of its upper part, when it starts to turn white it is time.<\/p>\n
Once turned, put a teaspoon of the dressing on top of the cooked part and wait a minute.<\/p>\n
